Gluten Free Carrot Cake Blondies

Full of carrots, coconuts, nuts and spices, these blondies will please everyone.

Ingredients

  • 1 1/4 cups Earth Balance
  • 1 tablespoon Balsamic Vinegar
  • 1 1/2 cups Earth Balance Soymilk
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Coconut Extract
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1/2 cup Golden Flax Meal
  • 3 cups Shredded Carrots
  • 1 cup Unsweetened Coconut
  • 1 cup Chopped Pecans
  • 2 cups All Purpose Gluten Free Baking Mix ( Bob
  • 1 tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Cardamom
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1/2 cup Powdered Sugar

Directions

1. Pre-heat over to 375

2. Place Earth Balance in the microwave for 1minute. Add to a large mixing bowl. Along with the rest of the wet ingredients. Mix well

3. In a separate mixing bowl, whisk the dry ingredients together

4. Add dry ingredients to wet and stir very well, until everything is totally incorporated

5. Grease a 9 by 13 glass pan with Earth Balance and pour mixture into pan

6. Bake for 45 minutes, rotating the pan halfway though

7. Cool completely ; cut into 12 squares and sift the powdered sugar onto each piece

    This looks great! I am going to substitute a few ingredients like refined sugar but otherwise this looks like a perfect recipe.

    I would love to bake this but I don’t live in the States and this recipe includes many brandname products I am not familiar with. I would be very grateful if you could please inform me what Earth Balance is. Also, what the golden flax meal and the gluten-free baking mix are made of. Thanks!
