Roasted Beet, Garbanzo and Almond Dip

Made Just Right member Karin Lazarus submitted this delicious dish to our Recipe Gallery, inspired by her love for Greek cuisine. This delightful dip is simple, healthy and full of fresh bright flavor. Serve with toasted pita chips, your favorite crackers or crudites.

1/3 cup Earth Balance® Buttery Spread with Olive Oil
1/2 pound beets, peeled and cut into quarters
6 cloves of garlic, peeled
1 cup canned garbanzo beans, drained and rinsed
1/3 cup raw almonds
2 tbsp. Balsamic vinegar
1 lemon, juiced
1 tsp. sea salt
1 tsp. freshly cracked pepper
2 tsp. fresh oregano leaves, finely chopped

Preheat oven to 400F. Place Earth® Buttery Spread with Olive Oil in a small roasting pan and set in oven until melted, remove from oven and place the beets, toss to coat with melted buttery spread. Roast for 30 minutes and add the garlic. Roast until beets and garlic are soft and caramelized, about 20 more minutes. Let cool for 10 minutes.

Place the beets, garlic, remaining melted buttery spread left in the pan, garbanzo beans and almonds in the bowl of a food processor and blend until smooth and creamy. Mix in vinegar, lemon juice. Season with sea salt and pepper. Transfer to a medium bowl, garnish with oregano. Cover and chill.
