Strawberry Cheesecake Smoothies

This afternoon, we’re sharing a recipe from Amanda Prince, who writes The Sunny Vegan, a blog with lots of creative and mouth-watering recipes. These strawberry cheesecake smoothies are just the thing for a refreshingly fruity break any time of the day.

Ingredients:
2 cups fresh strawberries
1 cup ice cubes (crushed, if possible)
3 tablespoons simple syrup
3 tablespoons vegan cream cheese
1/4 cup soy milk (vanilla)
Vegan cookies or graham crackers for topping

Directions:
Combine berries and ice in blender and pulse until smooth. Add simple syrup, cream cheese and soy milk and blend again until smooth. Pour into serving glasses (4 servings) and top with crushed cookies.
