3/4 cup Earth Balance® Buttery Spread
2 cups raw cane sugar
1/2 cup pureed ripe bananas (about 2-3 bananas)
1 cup Dutch-process cocoa powder
1 Tbs. vanilla extract
1 Tbs. apple cider vinegar
1 tsp. salt
1 tsp. baking powder
1 tsp. espresso powder
1 1/2 cups unbleached all-purpose flour
1 1/2 cups semisweet vegan chocolate chips
One recipe vegan fudge sauce (see recipe below)
1/2 cup chopped walnuts
Your favorite vegan ice cream
Raspberries or cherries for garnish
Preheat oven to 350°F. Lightly grease a 9X13 pan.
Melt Earth Balance Buttery® Spread in a saucepan over medium heat. Stir in sugar and cook 3 to 4 minutes, until sugar is completely dissolved. Allow to cool.
In a separate bowl, whisk banana puree with cocoa, vanilla, vinegar, salt, baking powder and espresso powder until smooth.
Stir in cooled butter and sugar mixture. Fold in flour and chocolate chips, stirring to combine well.
Pour batter into prepared pan and bake 30 minutes, until a wooden skewer inserted into the center comes out clean.
Remove from oven and allow brownies to cool completely before cutting.
To make sundaes: Cut brownies into 24 pieces. Place a brownie in a sundae glass (we like to cut the brownies into bite-sized pieces). Top with ice cream, fudge sauce, walnuts and a raspberry.
Hot Fudge Mocha Sauce Ingredients:
6 oz. unsweetened dark chocolate, chopped
1/4 cup Earth Balance® Buttery Spread
1/3 cup water
1/3 cup raw cane sugar
1/3 cup agave nectar
1/8 tsp. salt
2 tsp. vanilla extract
1 tsp espresso powder (optional)
Melt chocolate and Earth Balance® Buttery Spread in a saucepan over medium heat, stirring occasionally.
In a separate saucepan, heat water, sugar, agave and salt over medium heat, stirring until the sugar dissolves.
Stir chocolate mixture into sugar mixture and bring to a simmer over medium heat. Cook for 8 to 10 minutes, until thickened, stirring occasionally. Stir in vanilla and espresso powder.
