Vegan Gumbo Recipe for Fat Tuesday

Welcome to Fat Tuesday, the day Mardi Gras is celebrated in the city of New Orleans. What better way to join in on the excitement than with a Louisiana style Gumbo? Traditionally made with smoked ham or shrimp, we see no reason for vegetarians and vegans to miss out on this tasty stew!

We’ve got a recipe today adapted from Ms. Meanie at ChocolateChipsTrips, which she adapted from the original by Paul Deen. That’s a whole lot of adaptations leading to one delicious dish! Feel free to add veggie sausage to the recipe for a heartier bite.

  6. Spaghetti squash, not very original but it helped me turn a pasta addiction into healthy eating. When I first became vegan, that was easy, but learning to eat healthy and replace bad habits with good ones takes time, haha.
