These delightful peppermint patties were submitted to our recipe gallery by Vegan Triangle from La Vida Vegana. These are the perfect post-Christmas treat to make and enjoy. They earn bonus points in our book for being both vegan and gluten free!

4 1/2 cups powdered sugar
1 bag semi-sweet chocolate chips
3 tsp. of Peppermint Extract
1/4 cup Earth Balance® Natural Buttery Spread
1/3 cup Corn Syrup
Place wax paper on a larger baking sheet (or two small baking sheets).
Beat (yes, get out the mixer) the peppermint extract, Earth Balance® Natural Buttery Spread and corn syrup. After it’s well-combined and smooth, start adding the powdered sugar. (Add slowly, about 1/2 cup at a time).
Your mixture should be very crumbly and mostly dry. But you should be able to mash it together to form patties without it being sticky. Form small patties, and place on the wax-papered baking sheet(s).
Place the baking sheet(s) in the freezer for 45 minutes. (Freezing them really helps in the chocolate dipping process.)
*** While your patties are in the freezer, start melting the chocolate. If you don’t have a double boiler you can use a 1-2 quart pot, fill it halfway with water, and put a metal bowl on top. Bring water to a boil and place the chocolate in the metal bowl. ***
When the time is up, start dipping your patties in the chocolate. To be honest, I haven’t found a great way to do this. And I’m cheap. So I throw a patty in the chocolate, turn it over, poke a toothpick in the middle, and get it out of the bowl.
Let cool, then put in the fridge. Or put directly in fridge (still on the tray/pan). Enjoy!!!
